    Shrimp Scampi over Creamy Parmesan Orzo

    I have stumbled upon a much easier, equally as tasty substitute for risotto – orzo.  I must admit that my orzo exposure has been limited to (cold) salads, but I decided to branch out the other night in an attempt to replicate my favorite flavors of risotto without the 30 minutes of stirring.  It was a success! This is definitely weeknight friendly, and was the perfect compliment to shrimp scampi.  The rich and creaminess of the orzo went perfectly with the acidity of the shrimp.     Lasagna with Goat Cheese and Sausage

    Lasagna is such a comfort food!  Whether it’s a tried and true recipe or something outside the box, lasagna rarely disappoints. So I decided to try a new twist on an old classic and add goat cheese to my lasagna.     Maple Peanut Butter Cookies

    Brogan and I decided to make some cookies this morning so I thought we’d try out a peanut butter cookie recipe from Pinterest.  The recipe was for Honey-Peanut Butter Cookies,  but I was low on honey.  I decided to improvise and go with my go-to sweetener, maple syrup.  So I subbed butter in place of shortening and maple syrup in place of honey and these cookies were delish!  The maple really adds something great to the flavor, however it’s very subtle.     Sausage and Peppers Spaghetti

    This is one of my favorite pasta dishes!  It’s not your typical spaghetti – it’s full of fresh veggies, made with sausage and I like mine with angel hair.  This recipe makes a pretty large pot; plenty to feed a family and have leftovers too (I love leftovers!).  It’s pretty easy to make and can be done in around 30 to 40 minutes.  Me and the boys had this for dinner tonight, and after Brogan was done, he asked, “Can we have this again tomorrow?”  Dinner win!     My Go-to Marinade

    After years of experimenting, trying store-bought sauces and making dozens of recipes, I’ve finally found my go-to marinade!  It’s pretty simple – Dijon, maple syrup and garlic – and it goes great on pork tenderloin, chicken and salmon.
