    Chocolate Cupcakes with Cookie Dough Frosting

    I decided to do some more experimenting with cupcakes last weekend (yes, I’m behind on the food posting!)  The chocolate cupcake was basic, but the star of this show was the cookie dough frosting!  I found this on Pinterest and had to try it out – success!  It is definitely not your typical frosting – it is exactly like chocolate chip cookie dough without the eggs.     Artichoke and Broccoli Bake

    It was breakfast for dinner earlier this week.  Typically this is a go-to when I’m looking for a quick meal, but this time it was because I forgot to thaw out some meat.     Apple Basil Chicken Salad

    Chicken, Corn and Caramelized Onion Quesadillas

    These quesadillas were a last minute back-up plan that turned into a major success!     Caramel Corn Cupcakes

    It was a meatloaf and potatoes kind of night tonight! Oh, and we threw in some lemon and garlic roasted broccoli – yum, yum! All three of my boys love this, so it is one of my weeknight go-tos.
