    A Busy Week

    I took a little hiatus from blogging last week because sometimes there’s just a lot going on!  My week went a little something like this… Beckett got a new bed!     The Bribery Debate

    I bribe my kids. I typically only offer bribes in special circumstances – like when I want them to do something out of the ordinary.  Today, for example, was a no-brainer.  The boys and I were at the park with friends, and I wanted to get a picture of all four of our kids together on a bench.     The Yes Mom

    I decided to conduct an experiment with my oldest today.  I had this thought while the boys were napping… what if I didn’t say “no” when they wake up… what if I agreed to all the requests made of me for the entire evening?  What if, rather than “not now, buddy” or “in a second” or “maybe later” or “I don’t feel like it,” I just said “yes.” If I haven’t said it lately, parenting can be draining.     Buttermilk French Toast with Strawberry Syrup

    An upside to being in the midst of yet another winter storm… I’m home with my babies… and get to make them a big ole homemade breakfast. Breakfast just may be my favorite meal of the day.     One Pot Stovetop Chicken and Yellow Rice

    Ever since I started avoiding MSG in my food, yellow rice has pretty much been off limits. But my favorite variety of chicken and rice is chicken and yellow rice. So I decided to try to make it from scratch, which required me to work with a foreign ingredient – saffron. I was very proud of my small-town Publix for actually carrying it (in the ethnic section near the Spanish and Mexican foods).     Mini Banana Cupcakes with Peanut Butter Frosting

    I felt like baking today and the two brown bananas sitting on my counter prompted me to create these little gems. These cupcakes were another ode to the good ole peanut butter, banana and honey sandwich of my childhood. I opted for mini cupcakes, mainly because I saw some cute little mini cupcake cups at Publix (and bought them, of course). To be honest, I’ve never made mini cupcakes, and thought it would be fun to do something different. Turns out, these cupcakes work perfectly in the mini variety.     Now I know I don’t write too much about Beckett. The thing is, thank goodness, he doesn’t give me a whole lot to write about. First off, he doesn’t (really) talk yet. So while I’m waiting for witty little things to come out of his sweet mouth, they haven’t yet. I’ll let you know when they do.     Fried Okra

    One of the gems of Southern cuisine… fried okra. My mom made this for me growing up, and so it has a nostalgic quality for me. It’s one of my favorites – because I’m pretty sure that when you fry a vegetable, all the bad things associated with frying gets canceled out… right?? Oh, and it is definitely Brogan’s favorite.
